4 salmon filets 2/3 cup gf soy sauce 1/2 cup mirin 1 Tablespoon sugar 1 cup sake Salt
Directions
In a small saucepan combine soy sauce, mirin and sugar. Bring to a simmer over medium heat and stir until sugar is dissolved. Reduce heat to low and simmer until liquid is reduced to half. Remove from heat and let cool. Pour sake in a dish and marinate salmon in sake for 15 minutes.
Lightly sprinkle one side of filets with salt and broil or grill over a hot fire for 2 minutes, then turn and grill for 2 more minutes. Turn again and brush with teriyaki sauce and move filets to a cooler part of grill or on one lower level in broiler for 1 more minute. Turn and brush with sauce and return for 1 more minute. Test for doneness. If not done, repeat process of brushing and cooking for 1 more minute per side. Serve immediately.
Tips
The teriyaki sauce in this recipe is not as sweet as the processed variety. If you prefer a sweeter sauce, simply add more sugar. We used San-J’s Organic Whole Soybean Tamari Wheat Free Soy Sauce, www.san-j.com.
