Ingredients
2 bunches of asparagus, trimmed 6 slices prosciutto, diced 2 Tablespoons unsalted butter 3 Tablespoons Parmesan cheese shavings Salt and freshly ground black pepper to taste
Directions
Blanch asparagus in boiling, lightly salted, water until just tender. Drain and immediately plunge into a bowl of ice water. Let sit for 2 minutes. Drain and set aside.
In a large skillet, brown prosciutto. Remove from skillet and set aside.
In same skillet, melt butter over medium-high heat. Add asparagus; sauteing until heated through and coated with butter. Add browned prosciutto. Adjust seasonings to taste with salt and freshly ground black pepper.
Transfer to a serving platter and garnish with parmesan cheese shavings. Serve immediately.
Tips
You can blanch asparagus ahead of time. Just cover and refrigerate until right before serving. When ready to serve, saute them in butter and proceed with the remaining directions.
