Ingredients
8 slices gf bacon 1 onion, chopped 1 clove garlic, minced 3 ounces mushrooms, chopped 2 Tablespoons butter 1 pound ground beef 1 egg 1/4 teaspoon fresh ground black pepper 1 teaspoon salt 1/4 teaspoon dried oregano 1/3 cup dry sherry or apple cider
Directions
Preheat oven to 375 degrees F. Fry bacon in a skillet and remove to a paper towel to drain. Pour off all but about a tablespoon of fat. Return pan to heat and saute onion and garlic until onion softens; remove to a plate.
Add butter to pan. When melted, add mushrooms and saute until liquid has cooked off.
In a large bowl, combine all ingredients except bacon. Roll mixture into balls.
Crumble bacon into small uniform bits. (This is easily done with a rolling pin.) Roll meatballs in bacon bits to coat.
Place meatballs in a baking dish, cover and bake for 45 minutes. Serve immediately.
