Makes 20 pieces Difficulty
1/2 pound smoked mozzarella 4 ounces proscuitto 20 medium prunes
Set oven to broil.
Cut mozzarella into 1/2" pieces, about the same size as prunes. Slice proscuitto into 1/2 " strips. Place a piece of cheese on top of each prune and wrap with a strip of proscuitto. Use a toothpick to secure each piece.
Place appetizers on a baking sheet and broil until proscuitto gets crispy and cheese melts. Serve immediately.
Smoked mozzarella can be found in food specialty stores or natural food markets. We called the manufacturer to verify that it was gluten-free.
