Macaroni & Meatball Soup

Ingredients

For meatballs:
1 pound ground beef
1 garlic clove, minced
1 small onion, finely chopped
1/4 cup grated parmesan cheese
3 Tablespoons Italian parsley, chopped
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten

For soup:
4 slices gf bacon, diced
2 garlic cloves, minced
2 medium onions, coarsely chopped
1 large green bell pepper, diced
2 quarts gf Beef stock
2 cups gf tomato sauce
1 cup diced carrots
1 cup canned white beans, drained and rinsed thoroughly
1/2 cup Italian parsley, chopped
1/2 teaspoon dried oregano
8 ounce gf macaroni, cooked al dente
salt and freshly ground black pepper to taste
Directions
Make meatballs:
In a large bowl combine ground beef through egg; Mixing well. Form into meatballs about 3/4 inch in diameter. Set aside.

Place bacon in bottom of a large Dutch oven. Saute over medium heat until fat is rendered and bacon is nearly crisp, about 6 minutes. Transfer bacon to a plate. Remove all but about 3 tablespoons of fat from pan.

Brown meatballs on all sides, a few at a time. Set browned meatballs aside on a plate.

Add garlic, onion and green peppers to pan; saute for 5 minutes. Add gf beef stock, gf tomato sauce, carrots, bacon and meatballs to pan and bring to a boil over medium heat. Lower heat and simmer until carrots are tender, about 20-30 minutes. Add beans, parsley, oregano, and gf macaroni. Simmer for 5 minutes. Adjust seasonings to taste with salt and freshly ground black pepper. Serve.
Tips
We used Tinkyada’s gf macaroni for the gf pasta in this recipe.

Very Tasty! Not too tough to make and my kids loved it! Somehow the noodles and meatballs made the veggies go down easier! My young boys all had two bowls for dinner.
