1/2 cup chopped tomato, seeded 1/4 cup kalamata olives, pitted & chopped 2 Tablespoons feta cheese, crumbled 1 garlic clove, minced 1 Tablespoon fresh basil, minced Salt and freshly ground black pepper 12 cremini mushrooms olive oil
Preheat oven to 425°F.
In a small bowl, combine tomato, olives, feta, garlic and basil. Season to taste with salt and freshly ground black pepper. Set aside.
Remove stems from mushrooms. Rinse mushrooms and pat dry. Toss mushrooms with olive oil. Place stem-side down on a baking sheet. Bake for 5 minutes. Turn mushrooms stem-side up and fill with tomato mixture.
Return mushrooms to oven and continue to bake for 8-10 minutes or until heated through. Serve immediately.
