Chocolate Mocha Pudding

Ingredients
1/2 cup sugar
3 Tablespoons unsweetened cocoa
2-1/2 Tablespoons corn starch
Pinch of salt
1 large egg
2 egg yolks
2 cups Silk soy milk
4 ounces gf semi-sweet chocolate, chopped
2 Tablespoons Earth Balance (butter)
1 teaspoon instant espresso powder
1 teapsoon vanilla
Directions
In a medium bowl combine sugar, cocoa, corn starch and salt.
In a separate bowl, whisk together whole egg and egg yolks. Whisk eggs into sugar mixture until well blended. Set aside.
In a medium saucepan scald soy milk and remove from heat.
Add half of milk into egg mixture, whisking constantly until smooth. Add mixture slowly back into pan of milk, whisking constantly.
Place saucepan over medium heat and cook, whisking constantly, until mixture thickens and boils, about 5-7 minutes.
Remove from heat and add chopped chocolate, instant coffee and vanilla. Whisk until smooth.
Pour pudding into individual serving dishes and let cool at room temperature. Cover with plastic wrap and refrigerate.
