One 15 ounce can white beans, rinsed and drained 1/8 cup olive oil 1 medium onion, chopped 2 garlic cloves, minced 1 green pepper, cored, seeded and chopped 1 celery stalk, chopped 1 teaspoon dried oregano 1 teaspoon ground cumin 1/8 teaspoon cayenne pepper 1 pound chicken breast, boneless & skinless, cut into 1/2" pieces 1 cup gf chicken stock 1 cup water Kosher salt and freshly ground black pepper to taste
In a large saucepan, heat 1 tablespoon oil over medium-high heat. Add onions, garlic, green peppers and celery; saute until onions are translucent, about 5 minutes. Set aside.
In a small bowl, blend together oregano, cumin and cayenne pepper.
In a medium saucepan heat remaining oil over medium heat; adding chicken and browning quickly.
Add chicken, beans, stock and water to pan of vegetables and bring to a simmer. Simmer until contents are heated through. Season to taste with salt and pepper.
