6 Tablespoons unsalted butter 1-2/3 cup gf flour 2 Tablespoons ground almonds 1/2 teaspoon baking soda 1 teaspoon baking powder 1/2 cup sugar 1/2 teaspoon salt Zest of 1 orange 1/4 cup vegetable oil Juice of one orange (about 1/3 cup + 1 Tablespoon) 1/3 cup milk 2 eggs
Preheat the oven to 400°F. Line a 12-cup muffin pan with paper liners.
Melt butter and set aside to cool.
In a large bowl combine gf flour, almonds, baking soda, baking powder, sugar, salt and orange zest.
In a separate bowl, whisk together oil, orange juice, milk, and eggs. Add the cooled, melted butter to the wet ingredients. Pour the liquid mixture into the dry ingredients; mix with a fork until just combined.
Spoon the batter into the prepared muffin pan. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let cool on a cooling rack. Serve.
