Ingredients
1-1/2 cups mashed potatoes 1 medium russet potato, grated 3 Tablespoons gf flour 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 1 egg, lightly beaten 1/4 cup milk 1 Tablespoon unsalted butter
Directions
In a medium bowl mix mashed potatoes and grated potatoes together. Add gf flour, salt and freshly ground black pepper. Add the egg and milk; stir to combine.
Melt butter in a large skillet or griddle, over medium heat. Drop heaping tablespoons of batter onto the hot griddle. Cook for 3-4 minutes per side. Serve immediately.
Tips
These tasty potato pancakes go wonderfully with fried eggs, sausage or bacon.
