Asian Pasta Stir-Fry

Ingredients
1/2 cup peanuts 1 Tablespoon honey 1 garlic clove, minced 1/2 inch piece of ginger, peeled and minced 3 Tablespoons gf soy sauce 2 teaspoons rice wine vinegar 2 teaspoons sugar 1 teaspoon sesame oil 1/4 teaspoon hot red pepper flakes 1 pound large shrimp, shelled and deveined 2 teaspoons gf soy sauce 1 Tablespoon sherry 1 teaspoon salt 8 ounces gf spiral or penne pasta 2 Tablespoons vegetable oil, divided 1/3 cup red onion, chopped 2 celery stalks, sliced 1 red bell pepper, diced 3 scallions, chopped 2 Tablespoons cilantro, chopped Salt and freshly ground black pepper to taste |

Directions
Place shrimp in a small bowl. Add the gf soy sauce, sherry and salt. Let marinate while you prepare the rest of the ingredients.
Place peanuts in a small skillet. Drizzle honey over the top. Cook over medium heat, turning peanuts occasionally, until they are completely coated with honey and warmed throughout, about 5 minutes. Transfer to a sheet of wax paper and let cool.
In a small bowl, combine the garlic, ginger, 3 tablespoons gf soy sauce, rice wine vinegar, sugar, sesame oil and hot red pepper flakes. Set aside.
Prepare pasta according to package directions. Drain.
Heat 1 tablespoon vegetable oil over medium-heat in a wok or large skillet. When hot add the onions; stir-fry for 3-4 minutes. Add the celery and bell peppers; stir-fry for 3-4 minutes or until just tender. Remove the vegetables from the wok and set aside on a plate.
Add the remaining tablespoon of vegetable oil to the wok. Remove the shrimp from the marinade with a slotted spoon. When the wok is hot add the shrimp; stir-fry just until opaque and cooked through. Add the pasta, onions, peppers, celery, scallions, cilantro and peanuts to the wok. Drizzle the garlic and ginger sauce over the pasta. Stir-fry for 2 minutes or until the pasta is heated through.
Adjust seasonings to taste with salt and freshly ground black pepper. Serve immediately. |
