2 medium vine-ripened tomotoes, diced 1 garlic clove, minced 1/4 cup fresh basil, finely chopped 1/3 cup black olives, pitted & finely chopped 2 Tablespoons olive oil Salt and freshly ground black pepper 12 slices of proscuitto 1/3 cup feta, crumbled 12 slices gf french bread baguette
In a medium bowl, combine tomatoes, garlic, basil, olives and olive oil. Adjust seasonings to taste with salt and freshly ground black pepper.
Let stand for about 10 minutes to allow flavors to combine.
Toast baguette slices under broiler until lightly browned on both sides. Top each slice with a thin slice of proscuitto. Spoon tomato mixture over proscuitto and garnish with crumbled feta. Serve.
