Four-Six 8 ounce top sirloin steaks Salt and fresh ground pepper 1 Tablespoon olive oil 1/2 cup chopped shallots 4 Tablespoons butter, divided 1/3 cup madeira wine 2 Tablespoons chopped parsley
Directions
Heat a large heavy skillet over medium-high heat until very hot; adding oil. Season steaks on both sides with salt and freshly ground pepper. When oil is hot, add steaks to pan and cook for 3 minutes on each side. Remove to a plate and tent with foil to keep warm.
Let skillet cool slightly and add 2 tablespoons butter. When butter melts, add shallots and saute until soft. Add madeira and let reduce by half. Add remaining butter and stir to combine.
Adjust seasonings and pour sauce over steaks to serve. Garnish with parsley.
