Makes 4 servings. Difficulty
1/2 pound gf penne 1 cooked chicken breast, cut into bite-size pieces 1 Tablespoon olive oil 1 Tablespoon unsalted butter 1 shallot, minced 1/2 red bell pepper, cut into 1-inch pieces 3-4 large button or cremini mushrooms, sliced 2 Tablespoons prepared gf pesto 1/4 cup cream 1/4 cup freshly grated parmesan cheese Salt and freshly ground black pepper
Cook penne according to package directions. Drain.
In a large skillet or wok heat olive oil and butter over medium-high heat. Add shallots; sauté for 1 minute. Add peppers; sauté for 2-3 minutes. Add mushrooms; sauté for 2 minutes. Add chicken and pasta; stir- fry for 2 minutes, or until warmed through. Add pesto and cream; stir to combine. Adjust seasonings to taste with salt and freshly ground black pepper. Sprinkle with parmesan cheese and serve.
