Makes 4 servings. Difficulty
For dressing: 1/4 cup extra virgin olive oil 1 Tablespoon orange juice 1-1/2 teaspoons white wine vinegar 1-1/2 teaspoons sugar 1 teaspoon fresh lime juice Salt and freshly ground black pepper
For salad: 1 large orange 1 firm-ripe avocado 1-1/2 cups papaya, diced 6-8 cups gourmet greens 1 Tablespoon cilantro, chopped 2 large handfuls gf Tortilla chips
In a bowl, whisk orange juice, white wine vinegar, sugar, and lime juice together. Add olive oil in a steady stream, whisking until emulsified. Adjust seasonings to taste with salt and freshly ground black pepper.
Using a sharp paring knife, discard peeling and all white pith from orange. Working over a bowl, cut orange sections free from membranes. Pour off juices from bowl and whisk 1-1/2 tablespoons into dressing.
Peel, pit and dice avocados. In a large bowl, toss greens with orange sections, avocados, papaya, cilantro and 1/2 the dressing. Check to make certain there is enough dressing to lightly coat all the greens. If needed add more to taste. Add tortilla chips and toss to combine. Serve immediately.
