3 large russet potatoes 1/4 cup olive oil 1/4 cup red pepper, diced 1/4 cup green pepper, diced 1/4 cup yellow pepper, diced 1/2 cup onion, diced Salt and fresh ground pepper to taste Chopped parsley for garnish
Peel and cut potaotes into 3 pieces. Place them in a saucepan of salted water and bring to a boil. Reduce heat to a simmer and cook until just soft. Drain, cool and cut into cubes.
Heat oil in a large heavy skillet over medium heat. Add potatoes and cook until golden brown, about 8 minutes. Add all bell peppers and onion and, cook stirring often until vegetables are tender, about 5 minutes. Season to taste with salt and pepper and garnish with parsley. Serve immediately.
