Ingredients
1 gf french bread baguette, sliced into 1/4" thick slices Olive oil 5 slices prosciutto, cut into 6 strips each 3/4 pound cooked shrimp, coarsely chopped 1/2 cup mayonnaise 2 Tablespoons fresh basil, chopped 1 Tablespoon fresh chives, chopped 1 shallot, minced 1 Tablespoon fresh lemon juice Salt and freshly ground black pepper 3 ounces mixed gourmet greens 4 small plum tomatoes, thinly sliced crosswise
Directions
Preheat broiler.
Lay baguette slices in a single layer on a jelly roll pan. Spray slices lightly with olive oil.
Toast under broiler for about a minute per side or until lightly browned. Let cool.
In a medium bowl, mix shrimp with mayonnaise, basil, chives, shallots and lemon juice. Adjust seasonings to taste with salt and freshly ground black pepper.
Arrange a piece of prosciutto on top of each baguette slice. Top with a slice of tomato, a few mixed greens, and a scant tablespoon of shrimp mixture. Serve.
