2 small yellow squash, sliced 1 small zucchini, sliced 1/2 onion, chopped 1/8 cup vegetable oil 1-1/2 Tablespoons tequila 1 Tablespoon triple sec Salt to taste 1 Tablespoon chili powder Juice of 1 lime 1/4 cup chopped cilantro
In a medium bowl combine squash, zucchini and onions.
In a small bowl mix together oil, tequila, triples Sec, salt and chili powder.
Pour oil mixture over vegetables and toss to coat.
Heat a medium skillet over medium-high heat and add vegetables. Saute until just tender. Drizzle with lime juice and sprinkle with cilantro; serve immediately.
You can also grill the vegetables and drizzle with lime juice and sprinkle with cilantro as soon as they come off the grill.
