Makes about 1 quart Difficulty
1/2 cup sugar 1/2 cup water 3 large, ripe mangos Juice of 1 lemon Juice of 1 orange
In a small saucepan, combine sugar and water. Bring to a boil over medium-high heat until syrup is clear, about 2-3 minutes. Set aside.
Peel mangos and cut fruit from seeds. Add mango to a food processor and puree. With blades running add cooled syrup to pureed mango along with lemon and orange juices. If the mixture seems tart, add more sugar to taste.
Pour mango mixture into a bowl, cover with plastic wrap and refrigerate unti mixture is cold.
Transfer to an ice cream maker and follow manufacturer’s instructions.
