Ingredients

6 ounces dried rice stick noodles
1 teaspoon cornstarch
1 teaspoon toasted sesame oil
8 ounces large shrimp
3 large eggs, well beaten
1/2 cup 1-1/2" pieces scallion (white part only)
2-3 fresh red chili peppers, chopped
2 Tablespoons garlic, finely minced
1/4 cup Thai fish sauce
1/4 cup fresh lemon juice
3 Tablespoons sugar
1/2 cup bean sprouts
1/3 cup roasted peanuts, coarsely chopped
1/4 cup fresh basil leaves, cut into thin strips
1/4 cup fresh cilantro leaves
1/2 teaspoon red pepper flakes
1/2 teaspoon ground black pepper
2/3 cup peanut oil, divided
Directions
Before cooking:
Cover with hot water and soak rice noodles until softened, about 20 to 30 minutes. Drain and cover.

In a medium bowl stir together cornstarch and sesame oil.

Peel, de-vein and halve shrimp lengthwise.

Toss shrimp in cornstarch mixture and let marinate for 15 to 20 minutes.

Place well beaten eggs in a small bowl.

Place scallions, chili peppers and garlic on a small plate.

In a small bowl, stir together fish sauce, lemon juice, and sugar.

On a plate, place clockwise from the "top" in the following order:
Bean sprouts, peanuts, basil, cilantro, red pepper flakes, and black pepper.

To cook:
Heat a wok or skillet over high heat. When hot, pour in 1/3 cup peanut oil. Swirl oil around indide wok until very hot but not smoking. Add shrimp and cook, stirring vigorously, until translucent, 30 to 45 seconds. Drain.

Reheat wok over high heat. Pour in 2 tablespoons oil. Swirl briefly. Stir in beaten eggs. Slowly pour eggs into wok and cook, stirring vigorously, until eggs have set. Remove eggs and set aside.

Again, reheat wok over high heat. When hot, pour in 3 tablespoons peanut oil. Swirl until very hot but not smoking. Add scallion mixture and stir briefly until garlic browns very slightly.

Add noodles. Stir until well coated.

Add fish sauce mixture. Stir well.

Add shrimp. Add eggs. Stir well.

Add ingredients on plate in clockwise order, stirring as you go.

Pour into a serving dish. Serve immediately.

Tips
This dish takes a lot of preparation, but once everything is prepped it comes together very quickly.

good flavor but if I made it again I would add less lemon, very time consuming so probably won’t make again
