Autumn Apple Coffee Cake

Ingredients

Crumb topping:
3/4 cup gf flour
3/4 cup brown sugar
1 teaspoon cinnamon
3/4 teaspoon lemon zest
Pinch of salt
1 stick (8 Tablespoons) unsalted butter, softened
3/4 cup walnuts, chopped

Batter:
2 cups gf flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 stick (8 Tablespoons) unsalted butter, softened
1/2 cup canola oil
1/2 cup sugar
1/4 cup honey
1 teaspoon lemon zest
1 teaspoon vanilla extract
2 eggs
1/2 cup cream
2 pounds Granny Smith apples - peeled, cored & cut into 1/2-inch dice

Sauce:
1 cup créme fraiche or sour cream
1/4 cup powdered sugar (or more to taste)
Directions
Preheat oven to 350°F.
Butter a 10-inch springform pan. Set aside.

Crumb topping:
In a food processor, pulse gf flour with brown sugar, cinnamon, lemon zest and salt. Add butter and process until mixture resembles moist sand. Add walnuts and pulse briefly.
Transfer crumb topping to a bowl and press into large crumbs. Set aside.

Sauce:
In a small bowl, combine créme fraiche and powdered sugar until smooth. Cover and refrigerate.
Remove from refrigerator about 1/2 hour before serving.

Batter:
In a medium bowl whisk gf flour with baking powder, baking soda, ginger and salt.

In a large bowl, using a handheld mixer, beat butter until creamy. Add sugar and beat until light and fluffy. Add oil; beat briefly. Beat in honey. Add lemon zest, vanilla and eggs; beat until smooth.

Add dry ingredients in 2 batches, alternating with cream. Beat at low speed until smooth. Fold in diced apples.

Scrape batter into prepared springform pan, smoothing top. Sprinkle batter with crumb topping.

Bake for 1 hour and 20 minutes or until a toothpick inserted into cake center of comes out clean.
Allow cake to cool in pan for at least
1 hour before releasing springform and removing ring.

Cut coffee cake into wedges and serve with sweetened créme fraiche.
