3 cups chinese long beans, broken into 3" pieces 1-1/2 cups sliced mushrooms 2 Tablespoons unsalted butter Salt and fresh ground pepper
Bring a medium saucepan with about 2" of salted water to a boil. Add the beans and cook until almost tender; drain. Heat a medium skillet over medium heat and add butter. Add mushrooms and saute until almost browned. Add beans and cook for about 3 more minutes until mushrooms are browned and beans are coated in butter and heated through. Season with salt and pepper. Serve immediately.
