Sausage & Turkey Stew

Ingredients

1 Tablespoon olive oil
1/2 medium onion, chopped
1 garlic clove, minced
1 green bell pepper, chopped
1/2 red bell pepper, chopped
3 celery ribs, chopped
1-1/2 cups cooked turkey, cut into 1 inch chunks
1/2 lb. gf Italian sausage
1 (14-1/2 oz.) can diced tomatoes
1-1/2 cups gf Chicken stock
1 teaspoon fresh thyme, chopped
1/2 cup milk
1 Tablespoon gf flour
Hot red pepper flakes to taste
Salt and freshly ground black pepper
Directions
In a dutch oven heat the olive oil over medium high heat. Add the onions and sauté for 3 minutes. Add the garlic; sauté for 1 minute. Add the green and red bell peppers and celery; sauté for 4-5 minutes. Transfer the onions, garlic, bell peppers and celery to a plate and set aside. Add the Italian sausage to the skillet and brown. Add the turkey, diced tomatoes, chicken stock, and thyme.

In a separate bowl, whisk together the milk and flour. Add the milk mixture to the pan. Bring to a boil. Reduce heat and simmer for 10-15 minutes. Adjust seasonings to taste with salt, freshly ground black pepper and hot red pepper flakes.

Serve stew over steamed white rice.
