Ingredients
1 pound brussel sprouts, trimmed and halved 2 ounces pancetta, minced 1 garlic clove, minced 1/2 Tablespoon unsalted butter Salt and freshly ground black pepper
Directions
Place brussel sprouts in a saucepan of boiling water. Blanch for about 5-10 minutes or until crisp tender. Drain in a colander and immerse in cold water.
In a saute pan, melt butter. Add garlic and saute until fragrant. Add pancetta and saute until lightly browned.
Drain brussel sprouts and add to saute pan. Saute until warmed through. Season to taste with salt and pepper. Serve immediately.
