Basic Cornbread

Makes 24 squares.

Ingredients

1 cup gf flour
1 cup corn meal
2/3 cup sugar
1-1/2 Tablespoons baking powder
1/2 teaspoon salt
1-1/4 cups whole milk
3 large eggs, lightly beaten
1/2 cup canola oil
Directions
Preheat oven to 350°F.
In a large bowl, combine gf flour, corn meal, sugar, baking powder and salt.
In a separate bowl, combine milk, eggs and canola oil.
Pour liquid ingredients into dry and mix until just combined.
Pour the batter into an 13x9-inch greased baking dish. Bake for 18-20 minutes or until a toothpick inserted in center comes out clean. Let cool completely on a rack.

Being a southerner, this one just didn’t cut it for us. It was too sweet and had too much liquid. I had to cook it twice as long as the recipe said. However, the leftovers made a great corn bread pudding!

This recipe tastes great and freezes well. My son liked it and he doesn’t like anything gluten-free.

Used 1/3 cup sugar and 1/4 cup coconut flour and 3/4 cups of cornmeal. Used the flexible silicone muffin pans and they turned out FANTASTIC. Thank you Glutenfreeda.

Being a southern belle, and sadly misplaced in a Northern state, I need good southern (gluten-free) food. This cornbread was sweet and delicious. It was a hit with everyone in the family, as well. I served ours with black-eyed peas and my 2 year old was in heaven. Definitely a cornbread recipe that is in my top three. Enjoy ya’ll!

This was a big hit with everybody GF and not... I’ve taken it to a couple of big BBQ’s and gotten raves! I use polenta type cornmeal which seems to make it softer & more moist, and for those of you who couldn’t find the flour they suggested locally I’ve found that Pamela’s GF Bread mix works wonders ;)
