Ingredients
1-1/2 pounds cod filets, rinsed and patted dry 1 large egg, lightly beaten 2 Tablespoons milk 1 cup gf breadcrumbs 1/2 cup grated parmesan cheese 1/4 cup fresh parsley, minced 4 Tablespoons unsalted butter Lemon wedges
Directions
Combine egg and milk. Pour onto a plate; set aside.
Combine gf bread crumbs, parmesan and parsley. Put on a plate; set aside.
Dip cod in egg mixture and then coat with breadcrumb mixture. Shake off any excess.
Add butter to skillet and heat until hot. Add the filets without crowding. Increase heat to high and saute, shaking pan from time to time, until bottom of fish is nicely browned, about 3 minutes. Turn and brown on other side. Remove filets to a plate and keep warm in oven.
Saute remaining filets in same butter or replace it if it has burned. When all fish is cooked, garnish with fresh parsley and lemon wedges.
