Holiday Spritz Cookies

2 sticks (1 cup) unsalted butter, softened
1/2 cup sugar
2-1/4 cups gf flour
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 egg
1/4 teaspoon vanilla extract
Food coloring for color (optional)
Gf candy for decorating (optional)
Directions
Preheat oven to 400°F.

In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy, about 4-5 minutes. Beat in egg and vanilla until incorporated.

In a separate bowl, whisk gf flour, baking soda, and salt. Add dry ingredients to wet ingredients and stir with a wooden spoon until combined.

If you would like you can color the cookie dough by adding a few drops of food coloring and mixing until color is evenly distributed. We divided our dough into 3 bowls and made 3 different colors).

Spoon dough into a cookie press. Form desired shapes on an ungreased cookie sheet. Decorate with chocolate chips, gf candies, sprinkles, nuts, or dried fruit, if desired.

Bake for 5-8 minutes or until set but not browned. Immediately remove from cookie sheet and cool on racks.

I found this to be too salty if using the Gluten Free Pantry French Bread mix. I omitted the salt and doubled the vanilla. It made them perfect.

The cookies are beautiful and this recipe gave me an opportunity to use my Spritz cookie mold for the first time. However, I found them dry, grainy and a waste of two sticks of butter. My son took one bite and put the rest of the cookie down. I will try the recipe again but with a different flour mix that has less rice flour in it.
