1 Tablespoon unsalted butter 1 large shallot, minced 7 ouncees fresh spinach, trimmed and rinsed thoroughly Salt and freshly ground black pepper
In a large skillet melt butter over medium heat. Add shallot; sauté for 2 minutes. Add spinach, in batches, and cook, stirring occasionally until it wilts and turns bright green. Season to taste with salt and freshly ground black pepper. Serve immediately.
