1 head cauliflower, cut into florets 2 Tablespoons olive oil 1 large garlic clove, minced 1/4 cup white cheddar, grated Salt and freshly ground black pepper
Bring a large pot of salted water to a boil. Add cauliflower florets. Simmer until cauliflower is just tender. Drain and immediately plunge into ice water. Let sit for 2 minutes; drain.
Preheat oven to 450°F.
Place olive oil and garlic clove in a shallow baking dish. Place baking dish in oven. Let cook for 3-4 minutes or until garlic is fragrant. Add cauliflower and toss to coat with garlic and oil. Season with salt and freshly ground black pepper. Top with white cheddar and return to oven. Let cook until the cheese is melted, about 5 minutes. Serve.
