Baked Pasta with Italian Sausage & Goat Cheese

Ingredients

1/2 lb. gf penne
1/2 lb. gf Italian sausage*
1/2 lb. gf cottage cheese
1/8 lb. goat cheese
1/2 cup gf sour cream or creme fraiche
1/2 cup chopped green onions
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 cup unsalted butter, melted
3 large eggs, beaten

Directions
Cook pasta in boiling water with a little salt until just tender. Drain.
Preheat oven to 350 degrees F. Butter a baking or casserole dish.
Heat a skillet over medium-high heat and saute sausage until done. Drain.
In a large bowl, mix together cottage cheese, goat cheese and sour cream. Add green onions, salt, pepper, melted butter and eggs. Blend well. Fold in pasta and sausage and pour all into baking dish. Bake for 1 hour. Let stand 5 minutes before serving.
Tips
We used Tinkyada’s Penne for this recipe.
* For Italian Sausage
1 pound ground pork
1-1/4 teaspoon fennel seeds
1 teaspoon anise seed
1 teaspoon paprika
1-2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoons coarse ground pepper

Mix all ingredients together. For best results, refrigerate overnight.
