Louisiana Meatloaf

Ingredients

3 Tablespoons unsalted butter
2 cups green onions, finely chopped
1/2 cup celery, finely chopped
1 cup red bell pepper, finely chopped
1 cup green bell pepper, finely chopped
3 garlic cloves, minced
1 Tablespoon gf worcestershire sauce
1 Tablespoon gf hot pepper sauce
1 Tablespoon ground cumin
1-1/2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1/8 teaspoon ground nutmeg
1/2 cup gf catsup
1/2 cup half & half
2 bay leaves
1-1/4 pound ground pork
1-1/4 pound ground beef
3 large eggs
Directions
Preheat oven to 350º F.

In heavy, large skillet melt butter over medium-high heat. Add onions, celery, bell peppers and garlic; sautéing until tender, about 5 minutes. Add gf worcestershire sauce, gf hot sauce, cumin, salt, cayenne, black pepper, and nutmeg; stirring until fragrant, about 1 minute. Add gf catsup, half & half and bay leaves; simmer 5 minutes. Cool completely. Discard bay leaves.

Using hands; mix beef, pork and eggs in a large bowl. Add vegetable mixture and mix until well blended.

Transfer mixture to 9x5x3-inch loaf pan, pressing to fit.

Bake until meat loaf is golden brown, feels firm to touch and thermometer registers 160ºF when inserted into center; about 1 hour 30 minutes.
Transfer pan to rack and cool slightly.
Tips
Allow plenty of time for prep and cooking. This unique meatloaf is worth the effort.

this is a killer meat loaf that had two chefs fighting over leftover. comfort food that can’t miss!

Perfect for venison! (deer meat). Venison was mixed with pork during the grinding process,made this a loaf from heaven! Served with mashed potatoes, brown gravy, onion & mushrooms on side. A belly warmer here in Michigan! Note: Peppers can be reduced for less burn factor.

Absolutely can’t beat this recipe!! Meatloaf has never been a big hit in my family because we usually find ’traditional’ recipes to be bland and boring, if not a bit dry, too. Not so with this version - moist, flavorful and with just the right amount of spicy bite. This is a definite ”keeper” recipe that I’m certain will get frequent use in my household!

Never had spicy meatloaf before but this was fantastic. Big hit with my southern family. It can feel a little time consuming when you are in the middle of it, but with a food processor and some good music all the time is definitely worth it in the end.
