Ingredients
1 1/4 cups gf flour 1-1/2 teaspoon baking powder 1/4 teaspoon salt 2 very ripe bananas, mashed (3/4 cup) 1 stick (1/2 cup) unsalted butter, melted 2/3 cup sugar 1 large egg 1/2 teaspoon vanilla 3 oz. coarsely chopped bittersweet chocolate (gf) 1/3 cup pecans, chopped
Directions
Line 12 muffin cups with paper liners. Preheat oven to 375°F.
In a medium bowl, whisk together the gf flour, baking powder, and salt in a bowl. In a large bowl, whisk together bananas, butter, sugar, egg, and vanilla. Stir in the flour mixture until just combined. Mix in the chocolate and pecans.
Divide batter among lined muffin cups. Bake until muffins are puffed and golden, about 18-20 minutes or until a toothpick inserted into the center comes out clean. Transfer muffins to a rack and cool slightly.
