Ingredients
1 pork tenderloin, trimmed Salt and freshly ground black pepper 2 garlic cloves, minced 1 Tablespoon fresh ginger, minced 1 Tablespoon olive oil 1 Tablespoon gf soy sauce 1/4 cup orange marmalade
Directions
Preheat the oven to 400°F. Season the pork tenderloin with salt and freshly ground black pepper.
In a small bowl, combine the garlic, ginger, olive oil, gf soy sauce and orange marmalade.
In a large oven-safe skillet, brown the pork tenderloin over medium-high heat until browned on all sides. Spread about 1/2 of the prepared orange-soy sauce on the top of the pork tenderloin. Place the pan in the oven and roast for 20-25 minutes, turning half-way through and basting frequently with the prepared sauce. The pork is done when it reaches 160°F. Transfer the pork to a platter, tent with foil and let rest for 5-10 minutes before serving.
