For marinade: 1 teaspoon salt 1 teaspoon sugar 1 teaspoon rice wine 1 teaspoon gf soy sauce
6 cups gf chicken stock 2 cups ground beef 3 egg whites, lightly beaten 1 teaspoon salt 1/2 teaspoon white pepper 1 Tablespoon chopped ginger 1 Tablespoon chopped scallion 5 Tablespoons chopped cilantro 1 cup cooked white rice
Combine all marinade ingredients in a bowl and mix well. Add ground beef and blend with marinade. Marinate for 20 minutes. Pour the stock into a medium pan and bring to a boil. Add beef, stirring to break up large pieces and reduce heat to a simmer. Simmer for 10 minutes. Slowly add the egg in a stream, stirring constantly. Add rice salt and pepper and cook until rice is hot. To serve, add and equal amount of ginger, scallion and cilantro to 4 bowls and pour soup on top. Serve immediately.
