1-1/2 cups gf tomato juice 1 Tablespoon tomato paste 2 scallions, chopped Salt to taste Pinch of dried thyme 1/4 teaspoon curry Fresh ground pepper Grated zest of 1/4 lemon 1 Tablespoon lemon juice Sugar to taste 1/4 cup gf sour cream Chopped parsley for garnish
Directions
Mix together all ingredients except sour cream and parsley. Cover with plastic wrap and chill in refrigerator for at least 1 hour. Just before serving, stir in sour cream until smooth and sprinkle with parsley.
