2 Tablespoons olive oil 2 leeks, white part only, chopped 1 yellow onion, chopped 1 sweet onion, chopped 3/4 cup dry red wine 1/4 cup balsamic vinegar 1 Tablespoon sugar 1 teaspoon chopped fresh thyme Kosher salt and fresh ground pepper *12 gf bratwurst, halved lengthwise
In a large heavy pot warm the oil over medium-high heat. When hot, add leeks and onions and saute until soft, about 10 minutes. Add wine, vinegar and sugar and reduce heat to low. Simmer for about 10 minutes or until almost all of the liquid has evaporated. Stir in thyme and add salt and pepper to taste. Remove from heat. Prepare a grill. Place the brats on the grill over low heat and turn until nicely grilled on all sides. Remove from grill and spoon sweet onions over the top.
