Beef and Noodles

Ingredients

2 bacon slices, finely chopped
2 1/2 pounds boned chuck roast, cut into 1" cubes
1/2 teaspoon salt
1/2 teaspoon pepper
1 garlic clove, minced
5 cups onion, thinly sliced
3 Tablespoons gf flour
2 teaspoons white wine vinegar
1/2 teaspoon sugar
1/2 teaspoon dried thyme
10 ounces gf beef broth
12 ounces red wine
1 bay leaf
6 cups cooked gf spiral pasta
Directions
Preheat oven to 325 degrees. Cook bacon in a large Dutch oven over medium high heat until crisp, remove bacon, reserving drippings in pan. Set bacon aside. Add beef, salt, and pepper to drippings in pan and cook for 5 minutes, browning beef on all sides. Add garlic and cook 30 seconds more. Remove beef and set aside. Add sliced onion to pan and cover. Cook over medium heat for 10 minutes, stirring occasionally. Stir in flour and cook 2 minutes more. Add vinegar and the next 5 ingredients, (vinegar through bay leaf) and bring to a boil. Return bacon and beef to pan. Cover and bake for 2 hours. Discard bay leaf. Serve over noodles.
Tips
This recipe will be enjoyed by your whole family. The wine adds depth but not a wine taste. Plan ahead, this dish bakes in the oven for 2 hours.
