Cod with Cilantro-Garlic Marinade

Ingredients

1/2 cup fresh cilantro, coarsely chopped
1/2 cup fresh Italian parsley, coarsely chopped
3 garlic cloves, coarsely chopped
3 Tablespoons fresh lemon juice
1 Tablespoon extra virgin olive oil
3/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/8 teaspoon cinnamon
Salt and freshly ground black pepper
4 6oz. cod fillets
Olive oil
Directions
Place the cilantro, parsley and garlic in a food process; process until chopped. Add the lemon juice, 1 tablespoon olive oil, cumin, cayenne, paprika and cinnamon. Adjust seasonings to taste with salt and freshly ground black pepper. Place the marinade in a large zip-lock bag. Add the cod fillets and seal the bag. Turn to coat. Marinate in the refrigerator for 30 minutes. Remove the fish from the bag and discard the marinade.

Preheat the broiler.

Line a baking sheet with aluminum foil and lightly coat the top of the foil with olive oil. Place the fish on the pan and broil for 7 minutes or until the fish flakes easily with a fork. Serve.

I think I’d probably cut back on the amount of cilantro next time, but overall I liked this dish.
