Baked Herb & Garlic Chicken

Ingredients

4 chicken legs with thighs
1/3 cup minced garlic
1/4 cup lemon juice
1/8 cup olive oil
1 1/4 tablespoon dried oregano
1 teaspoon dried rosemary
1 Tablespoon coarse ground pepper
1/2-1 teaspoon salt
1/8 cup fresh chopped parsley

Directions
Preheat oven to 375 degrees F. Rinse chicken and pat dry. Place chicken in a baking dish. In a bowl, mix garlic, lemon juice, olive oil, oregano, rosemary, pepper and salt. Rub mixture evenly over chicken and arrange chicken cut side down in baking dish. Bake in oven until skin is well browned, about 1-1/2 hours. After 45 minutes, baste chicken with pan juices every 15 minutes. Transfer chicken to warm platter. Sprinkle with chopped parsley and serve.
Tips
Free Range chickens are chickens that have been raised in an environment where they are allowed at least some exercise instead of spending their entire lives in a cage. We feel Free Range Chickens are superior in flavor and moistness. Available at your butcher or natural food stores.

Excellent flavor. I used 12 chicken thighs (bone in). This is a recipe to pass on to friends/family.

I loved this recipe. I used boneless chicken breasts instead of the legs/thighs.

I barbecued in foil searing over coals the last 10 minutes. Great variation on a great recipe.
