4 oz gf elbow, penne or spiral pasta 1 Tablespoon canola oil 1 pound ground turkey 1-14oz can diced tomatoes, undrained 1 cup corn kernels, fresh, frozen or canned 1/2 cup chopped onion 1 clove garlic, minced 1 teaspoon chili powder 1/2 teaspoon ground cumin 1 teaspoon salt
Cook pasta according to package instructions, drain. Heat a large skillet over medium-high heat and add oil. When hot, add turkey, breaking up large pieces . Add onion and garlic and saute until nicely browned. Add chili powder, cumin and salt, stirring to blend. Add tomatoes with liquid, cooked pasta and corn; reduce heat to a simmer and cook for 5 minutes. Serve immediately.
