Makes about 5 cups Difficulty
3 cups fresh cranberries 2 Anjou pears, peeled and finely chopped 1-1/3 cups orange juice 6 oz. dried cranberries 2/3 cup brown sugar 3 Tablespoons minced crystallized ginger 1/8 teaspoon ground cardamon Pinch of salt
Place all the ingredients in a large saucepan. Bring to a boil. Reduce heat and simmer, stirring occasionally, for 20 minutes or until most of the cranberries have "popped". Transfer to a bowl, cover and chill. Bring to room temperature before serving.
