One 3lb beef chuck roast 1 teaspoon salt 1/2 teaspoon crushed peppercorns 2 large onions, sliced 6 garlic cloves, chopped 3 oz pancetta chopped 2 Tablespoons fresh parsley, chopped
Directions
Preheat oven to 400 degrees F. Sprinkle roast with salt and peppercorns. Place onions and garlic on the bottom of a roasting pan and place the roast on top. Cover pan and roast for 1 hour. Meanwhile, saute pancetta in a small skillet until crisp. Drain on paper towel. After 1 hour of cooking, turn roast over and sprinkle with crisp pancetta, then cover again and continue roasting for 1-1/2 to 2 more hours. Slice roast and serve with onions and sprinkled with parsley.
