1 cup dry white wine 3 cloves garlic, chopped 1 shallot, chopped 1 Tablespoon wine vinegar 1 cup cream 4 ounces feta Zest of 1 lemon A few drops of fresh lemon juice, to taste Salt and fresh ground pepper to taste 6 handfuls of romaine lettuce
For dressing: Combine wine, garlic, shallot, and vinegar in a saucepan over medium-hight heat and reduce to 1/4 cup liquid. Add cream and cook until mixture starts to thicken. Add feta and whisk until smooth. Add lemon zest and juice and season to taste with salt and pepper. To serve, place lettuce on individual plates and drizzle with the warm dressing.
