1-1/2 lb. salmon fillet Olive oil Salt and freshly ground black pepper 7 thin crosswise slices of peeled, fresh ginger 1/4 cup clam juice 1 Tablespoon gf soy sauce 1 Tablespoon sake 4 cilantro sprigs
Directions
Preheat the oven to 250°F.
Place the salmon on a sheet of heavy duty foil on top of a baking sheet. Rub olive oil on the salmon, then season the salmon fillet with salt and freshly ground black pepper. Arrange the ginger slices over the salmon. Pour the clam, soy sauce and sake over the top of the salmon. Enclose the salmon in the foil, making a sort of "sealed packet". Place in the oven.
Cook for about 45 minutes or until the fish flakes easily with a fork. Garnish with fresh cilantro and serve.
Tips
You can serve this poached salmon warm, cooled to room temperature or chilled.
