Chicken & Broccoli-Baked Potatoes

Ingredients

2 large russet potatoes
1/4 pound chicken breast, skinned, boned and cut into 1" pieces
1/2 Tablespoon gf flour
1/2 teaspoon paprika
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 Tablespoon butter
1 cup broccoli, use small florets
1/2 cup gf chicken broth
1/2 cup cheddar cheese, cubed

Directions
Bake potatoes at 400 degrees F. for one hour.

Mix together chicken, flour, paprika, salt and pepper.

Melt butter in a large skillet and add chicken mixture and broccoli; saute for
5 minutes. Add chicken broth, bring to a boil and cook for 3 minutes, or until chicken is done. Add cheese and mix until melted.

Cut potatoes open lengthwise and make two cuts across center line. Fluff potato with a fork.

Spoon chicken and broccoli mixture on top potates. Serve.
Tips
You can microwave the potatoes by piercing with a fork and microwaving for about 16 minutes on high, but we prefer the taste and texture of oven baked potatoes. Just pierce with a fork (to release steam) and pop them in the oven at 400 degrees F. for one hour before you want to eat.
