2 lbs. chicken wings (about 10 whole wings - discard tips) Salt and freshly ground black pepper 1 Tablespoon olive oil 1/4 cup gf ketchup 2 Tablespoons gf soy sauce 1 Tablespoon honey 1 Tablespoon rice vinegar 4 scallions, trimmed and thinly sliced, divided Hot red pepper flakes (optional)

When the wings are done, transfer them to a large bowl. Tent with foil to keep warm.
In a small bowl, whisk together the ketchup, gf soy sacue, honey, rice vinegar and half the scallions. Adjust seasoning to taste with salt, freshly ground black pepper and hot red pepper flakes. Transfer wings to a platter and sprinkle with remaining scallions.
