Makes 4 servings. Difficulty
2 Tablespoons unsalted butter 1 lb. sugar snap peas, trimmed 1 teaspoon fresh mint, chopped 1/8 teaspoon hot red pepper flakes 2 teaspoons fresh lime juice Salt and freshly ground black pepper
Heat 1 tablespoon of butter in a medium saucepan. Add the peas and toss to coat with the butter. Add 1/3 cup water, cover with the lid slightly ajar, raise the heat to medium high, and steam until the peas are almost tender, about 5 minutes. Remove the lid and let any remaining liquid boil off. Stir in the remaining tablespoon of butter, the mint, hot red pepper flakes and lime juice. Season to taste with salt and freshly ground black pepper. Serve immediately.
