For the dressing: 1 (1/2) inch piece of fresh ginger, peeled and coarsely chopped 1/4 cup creamy peanut butter 3 Tablespoons sesame oil 1/4 cup rice vinegar 1-1/2 Tablespoons sugar 2 Tablespoons water Dash of Siracha hot sauce Salt and freshly ground black pepper
For the salad: 6 cups gourmet mixed greens 1/2 red bell pepper, julienned 1/2 cup red onion, sliced thin 1 carrot, julienned 1 apple, cored & sliced thin
Place the ginger, peanut butter, sesame oil, rice vinegar, sugar and water in a food processor or blender and process until smooth. Season to taste with a dash of gf hot sauce, salt and freshly ground black pepper. Set dressing aside.
Place the salad greens, bell pepper, red onion, carrot, and apple in a large salad bowl. Toss the salad with 1/2 the dressing. Add more dressing to taste.
