Pan Fried Pork Loin Chops with Dried Fruit & Port Sauce

Ingredients
2 Tablespoons olive oil 4 5oz. boneless pork loin chops, trimmed of fat Salt and freshly ground black pepper 1/2 cup dried mixed fruit, chopped 2 Tablespoons port 1 cup gf Chicken Stock 3 Tablespoons unsalted butter
Directions
Heat the olive oil in a large skillet over medium high heat. Season the pork loin chops on both sides with salt and freshly ground black pepper. Add the pork chops to the skillet and cook for about 4 minutes per side, or until just cooked through. Transfer the pork loin chops to a plate. Add the dried fruit to the skillet and cook for 1 minute. Add the port and cook for 1 minute. Add the chicken stock and bring to a boil. Boil mixture until reduced to about 1/2 cup. Remove from heat and whisk in butter. Adjust seasonings to taste with salt and freshly ground black pepper. Serve.
