Ingredients
1 Tablespoon vegetable oil 2-1/2 teaspoons ground cumin 1/2 teaspoon freshly ground black pepper 1-1/2 teaspoons salt 4 (1-inch thick) pork loin chops 1/2 pineapple (about 1-1/4 cups) diced 2 shallots, diced 1/2 red bell pepper, diced 1/2 serrano chile, seeded and minced 1 Tablespoon fresh lime juice 2 Tablespoons fresh cilantro, chopped
Directions
Prepare the grill.
Stir together the vegetable oil, cumin, ground pepper and salt in a small bowl, then rub mixture all over pork loin chops. Set aside.
In a separate bowl, stir together the pineapple, shallots, bell pepper, chile, lime juice and cilantro. Season to taste with salt.
Lightly oil grill rack and grill pork loin chops, turning once, until just cooked through, about 6 to 9 minutes total. Transfer to a clean platter and loosely cover with foil. Let rest for 5 minutes. Serve pork loin chops with pineapple salsa.
